Sambal ! Is a daily meal for some Malaysian(correct me if I’m wrong). There are lot of different types of sambal, like sambal petai, sambal udang, sambal ikan bilis, sambal sotong and etc. It has been long time I didn’t cook hot and spicy foods. So, last Saturday, I had try to cook Sambal udang kering(dry shrimp), and it seem that I still maintain my skill(hahahahhaha….)
Ingredients:
- Dry shrimp(washed)
- Thai Chili(cili padi) or dry chili(cili kering)
- Garlic
- Dry Onion
Methods
- Put all ingredients into a mortar and pound with pestle until all into mash ( you can use blender to blend all the ingredients also, but the out come can be little bit different)
- Scoop out the half-ready sambal into a bowl
- Heat up wok with 3 spoons of cooking oil (don’t put any salt or soy sauce because its already salty)
- Fried the half-ready sambal about 4-5 minutes
WARNING : This Sambal is Super hot and spicy

dried shrimp sambal is my favourite. it tastes great with with rice, noodles and even bread. haven’t try making it with cili padi, though. will certainly try that one day
